Paul’s Comments: Only 300 bottles of Dons Acre are produced each year. The whole process from pruning to picking is done by hand using traditional techniques. The vines are pruned in such a way to limit the yield to 1/3 tonne per acre ensuring maximum flavour intensity. The techniques are employed during the wine making.
The fruit is lightly crushed, cold soaked and wild yeast fermented in French oak open Hogsheads. Pressing is undertaken with a hand operated basket press and the wine is then allowed to mature for 18 months in new French oak. The wine produced is elegant and yet intense.
